Inspired by the vast bounty of the teeming seas in our region, for this issue we have turned our gaze to a rather intricate subject – the seafood culinary scene. While there's a whole smorgasbord of seafood dishes, the beauty of seafood is in the simplicity itself, and of course, the freshness - and that's what makes it delicate.
To sate your taste buds, we have put together an array of much-loved seafood produce, followed by the finest signature dishes that best represent each of these delicacies of the deep – from snapper and salmon to lobster and urchin.
Being a small island, Bali takes pride in its wide selection of fresh, locally sourced seafood, and the stellar gastronomic geniuses who know how to meticulously process the ingredients and turn them into signature dishes. However, Jakarta, Singapore and Hong Kong have plenty to boast about and naturally, we cannot overlook the magnificent seafood dishes from the most prominent restaurants in Jakarta, Singapore, and Hong Kong; so prepare your appetite for the region's ultimate seafood spread in the region.
Meanwhile on the inspirational people front, we meet up with Daniel Calvert, chef de cuisine for Belon in Hong Kong, whose exceptional experience remains unrivalled. We also talk to the Alila Seminyak's chef de cuisine Vivian Vitalis, and coveted celebrity chef Sam Leong from the Michelin-starred Forest at Resorts World Sentosa in Singapore.
On the Gourmet section, we're serving a selection of new and buzz-worthy restaurants in Bali, including Kaum, Frestro and Kunyit. We delved into Jia at Shangri-La Hotel in Jakarta, as well as Alto and Attarine, not to mention L'Atelier de Joël Robuchon and Osia Steak & Seafood Grill in Singapore.
To top off this appetising issue, we have some fine wine from Beringer, potent liquor from Macallan, great new after-hours joints in Jakarta and Hong Kong, and a pampering getaway at Thermes Marins Bali at AYANA Resort and Spa BALI in Spalicious.
