In­spired by the vast bounty of the teem­ing seas in our re­gion, for this is­sue we have turned our gaze to a rather in­tri­cate sub­ject – the seafood culi­nary scene. While there's a whole smor­gas­bord of seafood dishes, the beauty of seafood is in the sim­plic­ity it­self, and of course, the fresh­ness - and that's what makes it del­i­cate.

To sate your taste buds, we have put to­gether an ar­ray of much-loved seafood pro­duce, fol­lowed by the finest sig­na­ture dishes that best rep­re­sent each of th­ese del­i­ca­cies of the deep – from snap­per and salmon to lob­ster and urchin.

Be­ing a small is­land, Bali takes pride in its wide se­lec­tion of fresh, lo­cally sourced seafood, and the stel­lar gas­tro­nomic geniuses who know how to metic­u­lously process the in­gre­di­ents and turn them into sig­na­ture dishes. How­ever, Jakarta, Sin­ga­pore and Hong Kong have plenty to boast about and nat­u­rally, we can­not over­look the mag­nif­i­cent seafood dishes from the most prom­i­nent res­tau­rants in Jakarta, Sin­ga­pore, and Hong Kong; so pre­pare your ap­petite for the re­gion's ul­ti­mate seafood spread in the re­gion.

Mean­while on the in­spi­ra­tional peo­ple front, we meet up with Daniel Calvert, chef de cui­sine for Belon in Hong Kong, whose ex­cep­tional ex­pe­ri­ence re­mains un­ri­valled. We also talk to the Alila Seminyak's chef de cui­sine Vi­vian Vi­talis, and cov­eted celebrity chef Sam Leong from the Miche­lin-starred For­est at Re­sorts World Sen­tosa in Sin­ga­pore.

On the Gourmet sec­tion, we're serv­ing a se­lec­tion of new and buzz-wor­thy res­tau­rants in Bali, in­clud­ing Kaum, Fre­stro and Kun­yit. We delved into Jia at Shangri-La Ho­tel in Jakarta, as well as Alto and At­tarine, not to men­tion L'Ate­lier de Joël Robu­chon and Osia Steak & Seafood Grill in Sin­ga­pore.

To top off this ap­petis­ing is­sue, we have some fine wine from Beringer, po­tent liquor from Ma­callan, great new af­ter-hours joints in Jakarta and Hong Kong, and a pam­per­ing getaway at Ther­mes Marins Bali at AYANA Re­sort and Spa BALI in Spa­li­cious.
