The bright and colour­ful UNIQUE Rooftop Bar & Restau­rant has its culi­nary fo­cus fixed firmly on Mex­ico to add some­thing dif­fer­ent to Sun­days on the Is­land of the Gods. The live mu­sic is Latino, the pool is invit­ing, there are free-flow mag­i­cal mar­gar­i­tas and food that is as bright and colour­ful as the decor. Ooz­ing with fresh­ness and plenty of kick from the chill­ies, din­ers can choose as many of the ap­pe­tiz­ers as they like. Or­ders fly in for the gua­camole, sour cream and chipo­tle cheese plate, while the tira­dito de hauchi­nango – finely sliced red snap­per and guava with jalapeno oil and an­tic­u­cho sauce, and the pam­bazo – a kind of thick savoury pan­cake stuffed with spicy gua­jillo sauce, chorizo po­tato and sour cream topped with cheese and let­tuce – come in a close sec­ond in pop­u­lar­ity.

Choose one of the hearty main courses, which in­clude pork, chicken, fish and beef dishes like the Huevos rancheros y chuleta, a tasty dish of re­fried beans topped with chunks of fork-ten­der pork and spicy red ar­bol sauce with a fried egg on top; Bar­ba­coa

short ribs with Mex­i­can rice, green salsa and cal­abacita salad; Len­gua en salsa chipo­tle beef tongue, chick­peas and chipo­tle sauce; and En­chi­ladas min­eras – spicy chicken with cheese en­chi­lada and red chilli sauce.

If you still have room, then feel free to pick and mix from the dessert se­lec­tion to your heart's con­tent – we es­pe­cially liked the cream cheese caramel with eggnog te­quila sauce and the rice pud­ding with shred­ded co­conut and fruit compote.

Guests can add a drinks pack­age of free flow red and white wine, as well as frozen mar­gar­i­tas. The Mex­i­can Sun­day Brunch runs from 11AM to 3PM and is a ca­sual, re­laxed way to spend time lis­ten­ing to good mu­sic, gaz­ing out across the tree­tops and in­dulging in great food and drink with friends or fam­ily.

There are boun­ti­ful brunch options in Bali, but the UNIQUE brigade were ea­ger to pro­duce a menu that would re­ally lighten up some­one’s Sun­day, and what could be bet­ter than au­then­tic Mex­i­can served along­side a tree­top sky­line! The food is im­pact­ful, us­ing
