Reg­u­lars of The Ritz-Carl­ton Jakarta, Mega Kuningan will be fa­mil­iar with Lobo Restau­rant's lat­est ad­di­tion to its pool of culi­nary tal­ent. A Ger­man na­tive, Chef de Cui­sine Jan Sch­wit­talla started his culi­nary jour­ney at the ten­der age of 19, learn­ing clas­si­cal French tech­niques and hon­ing his skills in Miche­lin-starred kitchens in France and Ger­many be­fore join­ing Lobo Restau­rant as chef de cui­sine. A prag­matic and in­ven­tive chef, Chef Jan's fo­cuses on qual­ity sea­sonal in­gre­di­ents metic­u­lously sourced lo­cally and in­ter­na­tion­ally such as Lom­bok's prized seafood and air-flown Euro­pean truf­fles.

First-time din­ers at Lobo Restau­rant are urged to try the chef's tast­ing menu, in which din­ers can ap­pre­ci­ate Chef Jan's breadth of ex­pe­ri­ence in four to six dishes high­light­ing clas­si­cal French tech­niques with unique in­no­va­tions. One dish fea­tured in the tast­ing menu is the egg on­sen – a per­fectly cooked on­sen egg sits in the bot­tom of a crisp potato tower con­tain­ing truf­fle and porcini dux­elle.
