5g blanched chopped long beans

5g blanched bean sprouts

5g blanched shred­ded white cab­bage

5g blanched sweet corn

50g cooked sticky rice

Green peanut sauce

30g black bread­crumbs (fine bread­crumbs with squid ink) Beaten egg yolk


1. Purée cooked green peas with tra­di­tional peanut sauce, sea­son to taste. Set aside enough to use in plat­ing.

2. Blanche veg­eta­bles, com­bine with green peanut sauce when cool.

3. Form a flat cir­cle of sticky rice in the hand, spoon in 20g mixed veg­eta­bles and com­press into a ball just smaller than a ten­nis ball.

4. Roll in egg yolk and coat in bread­crumbs.
