THIS SPIR­I­TU­OUS liquor has been dis­tilled from the sap of cer­tain palm trees since time im­memo­rial with a num­ber of vil­lages in Ban­gli and Karangasem prov­inces long ded­i­cated to its pro­duc­tion. Arak from the lon­tar palm, which only grows in the much drier, poorer parts of the is­land, is gen­er­ally con­sid­ered to be the best, and in the area around Amed it is some­times triple-dis­tilled to pro­duce arak api, lit­er­ally ‘fire wa­ter’. As well as an in­tox­i­cant, arak is an im­por­tant in­gre­di­ent in some of­fer­ings es­pe­cially thosese ded­i­cated to demons.
