Ev­ery last de­tail has been care­fully thought out to en­sure the ul­ti­mate fine-dining ex­pe­ri­ence for each guest. For a starter, I choose the de­li­cious Hokkaido sea scal­lop with baerii stur­geon caviar, pan-seared foie gras and per­fectly cooked es­car­got. It is the per­fect open­ing salvo to the main course, coq au vin, chicken cooked with mush­rooms, onions and a light gravy. The sec­ond course is the fresh Tas­ma­nian salmon fil­let with green peas and wild mush­rooms. But my favourite is the pre­mium black an­gus steak au poivre. The steak is juicy and meltes in my mouth. Dessert is fresh red berries with whipped cream and amazingly de­li­cious prof­iteroles with co­coa nibs of ice cream and warm choco­late sauce. If you want the best of French cui­sine, Lyon will tame your crav­ings.
