There is noth­ing I love more than com­ing home af­ter a long day, kick­ing my shoes off and cook­ing some­thing re­ally de­li­cious for din­ner! The re­al­ity is, most of us just don’t have hours to spend in the evening pre­par­ing and cook­ing a meal. I get it. That’s why my recipes tend to be su­per-quick and su­per-sim­ple, with­out sac­ri­fic­ing nu­tri­tion or taste.

In the book I in­clude some of my favourite healthy ‘fake­aways’ for those Fri­day nights when you’re crav­ing some­thing that feels a lit­tle bit more like a treat. For a night in with friends or fam­ily (par­tic­u­larly my sis­ter Emma, pic­tured with me here), I love to knock up a big plat­ter of sweet potato na­chos and chilli (op­po­site) for ev­ery­one to nib­ble on.
