Guilbaud’s cellar is legendary and has been built up over more than a quarter of a century. The wine list, for me, is a great read, but in great restaurants I prefer to put myself in the hands of a great sommelier, as was the case here. As a guide, wines by the glass go from €12 to €70. There’s a Sancerre for €17 and a Crozes-Hermitage for €18.
