World award for Mac­room buf­falo cheese

Win­ning gold at the World Cheese Awards, for the sec­ond year in suc­ces­sion, shows the suc­cess of Mac­room buf­falo moz­zarella in its three years of pro­duc­tion.

Ri­cotta, from Johnny and Geraldine Lynch’s buf­falo herd, in Cill na Mar­tra, also got a bronze award at the same com­pe­ti­tion. And Mac­room buf­falo ri­cotta picked up two stars at this year’s UK Great Taste Awards.

Us­ing whey, a byprod­uct in the mak­ing of moz­zarella, buf­falo cream is then added to make the ri­cotta. It is a cheese used in cheese­cakes, lasagne, ravi­oli, and other pasta dishes.

Mus­graves stock it, and it is also avail­able at farm­ers’ mar­kets.
