HERE’S a wicked idea from hus­band and wife team Enda Hool­maa and Tara Haugh who road-tested their burg­ers at Ir­ish food and mu­sic fes­ti­vals and are now open­ing the won­der­fully named Bur­ga­tory at Span­ish Arch in Gal­way. The Amer­i­can diner-in­spired restau­rant opens next month and will serve burg­ers, fried chicken, shakes, and sides, mak­ing ex­ten­sive use of Ir­ish and lo­cally pro­duced West of Ire­land in­gre­di­ents. Chef-owner Enda Hool­maa said, “We want to bring all the skills and ethics from a restau­rant into a burger joint.”
