Blacks: masters of brewing and distilling

Irish Examiner - Supplement - - KINSALE -

Sam and Maud Black are a husband and wife team who started their brewing and distilling company Blacks Brewery in 2013.

This venture/ obsession first began many years ago when Maud gave Sam a beer making kit for Valentine’s Day.

What started as a hobby quickly developed into an obsession and thus through Sam’s passion and enthusiasm Blacks Brewery became reality.

“Living the dream since 2013!”

“We want to escape the mundane of the mass market by producing beers with passion, personality and lots of hops,” said Sam Black. “At Blacks we produce a range of 7 core beer products, our flagship beer is KPA (Kinsale Pale Ale) this is a 5% Pale Ale, we also produce a certified Gluten Free Lager called 1601.”

Black’s started distilling onsite at their brewery in Kinsale in late 2014. At the time it was the only co-located brewery and distillery in Ireland. The Distillery makes small batch runs of Irish Poitin, US Style Moonshine and is currently developing an Irish Rum, but the main production focus has always been Gin.

Sam Black had developed his skills in producing award winning beer recipes and so he began his gin recipe development in the same vain. His first few attempts at creating a recipe for Blacks Gin did not go very well at all, in fact only Sam seemed to like the hopped gin he came up with (hops being a typical beer ingredient).

Thankfully Maudeline Black, his wife and business partner took charge of the project and developed and refined her gin through a full 17 recipe variations before she deemed it to be ready. Black’s Gin features 13 different botanical — Lemon Peel, Orange Peel and Pink Grapefruit peel give a fresh citrus background to complement the Juniper, Coriander, Liquorice and Angelica root combine with cinnamon to spice and balance the flavours and enhance a dry finish.

Blacks Gin also features vapour infused Irish heather flowers to enrich the gin and pay tribute to its Irish heritage.

The brewery and distillery is now open for tours from Tuesday to Saturday from 1pm to 5pm. See advert for details.
