Blacks: mas­ters of brew­ing and dis­till­ing

Sam and Maud Black are a hus­band and wife team who started their brew­ing and dis­till­ing com­pany Blacks Brew­ery in 2013.

This ven­ture/ ob­ses­sion first be­gan many years ago when Maud gave Sam a beer mak­ing kit for Valen­tine’s Day.

What started as a hobby quickly de­vel­oped into an ob­ses­sion and thus through Sam’s pas­sion and en­thu­si­asm Blacks Brew­ery be­came real­ity.

“Liv­ing the dream since 2013!”

“We want to es­cape the mun­dane of the mass mar­ket by pro­duc­ing beers with pas­sion, per­son­al­ity and lots of hops,” said Sam Black. “At Blacks we pro­duce a range of 7 core beer prod­ucts, our flag­ship beer is KPA (Kin­sale Pale Ale) this is a 5% Pale Ale, we also pro­duce a cer­ti­fied Gluten Free Lager called 1601.”

Black’s started dis­till­ing on­site at their brew­ery in Kin­sale in late 2014. At the time it was the only co-lo­cated brew­ery and dis­tillery in Ire­land. The Dis­tillery makes small batch runs of Ir­ish Poitin, US Style Moon­shine and is cur­rently de­vel­op­ing an Ir­ish Rum, but the main pro­duc­tion fo­cus has al­ways been Gin.

Sam Black had de­vel­oped his skills in pro­duc­ing award win­ning beer recipes and so he be­gan his gin recipe devel­op­ment in the same vain. His first few at­tempts at cre­at­ing a recipe for Blacks Gin did not go very well at all, in fact only Sam seemed to like the hopped gin he came up with (hops be­ing a typ­i­cal beer in­gre­di­ent).

Thank­fully Maude­line Black, his wife and busi­ness part­ner took charge of the project and de­vel­oped and re­fined her gin through a full 17 recipe vari­a­tions be­fore she deemed it to be ready. Black’s Gin fea­tures 13 dif­fer­ent botan­i­cal — Lemon Peel, Orange Peel and Pink Grape­fruit peel give a fresh cit­rus back­ground to com­ple­ment the Ju­niper, Co­rian­der, Liquorice and An­gel­ica root com­bine with cin­na­mon to spice and bal­ance the flavours and en­hance a dry fin­ish.

Blacks Gin also fea­tures vapour in­fused Ir­ish heather flow­ers to en­rich the gin and pay trib­ute to its Ir­ish her­itage.

The brew­ery and dis­tillery is now open for tours from Tues­day to Satur­day from 1pm to 5pm. See ad­vert for de­tails.
