Fam­ily firm’s tasty prof­its with top qual­ity ice cream and frozen yo­gurt

Pa­ganini is a fam­ily-owned Ir­ish com­pany which was founded in 1990 by Tomás Mur­phy who be­gan mak­ing ice cream us­ing a clas­sic Ital­ian recipe on his dairy farm, Cool­hull Farm, in Wex­ford.

To­day the com­pany still spe­cialises in dairy and makes a full range of pre­mium ice cream and frozen desserts us­ing the raw milk from Cool­hull Farm.

Bord Bia ac­knowl­edged the in­no­va­tion of this dairy and bak­ery by pre­sent­ing Pa­ganini with the In­no­va­tion Award in the 2013 Bord Bia Food & Drink Awards.

Raw milk and cream from the Mur­phy Fam­ily Farm in Cool­hull, Wex­ford is a key in­put to all Pa­ganini’s dairy desserts and ice-cream.

Cheese­cakes and all dairy in­gre­di­ents are pas­teurised on­site to en­sure op­ti­mal food safety, and the best avail­able in­gre­di­ents are used to com­pli­ment the best of Ir­ish dairy in­gre­di­ents, in­clud­ing fresh whole eggs from Wex­ford, Bram­ley ap­ples from Co Ar­magh, Bel­gian choco­late and the high­est qual­ity Ital­ian flavour pastes.

Cool­hull Farm Ap­ple Pie Cheese­cake was short­listed for the Prod­uct of the Show Awards at IFEX 2016.

“We’ve taken a new twist on the tra­di­tional Ir­ish favourite of ap­ple tart with ice­cream or cream,” com­mented Barry Mur­phy, man­ag­ing di­rec­tor, Pa­ganini.

“We are still us­ing the same core in­gre­di­ents of Bram­ley ap­ples and Ir­ish Dairy but have brought it to a whole new level. These flavours bal­ance each other per­fectly.

“Some of the best in­no­va­tions in­volve do­ing sim­i­lar things a lit­tle dif­fer­ently and that is what we are do­ing with the Cool­hull Farm range,” added Mr Mur­phy. “We have brought ev­ery­thing that is re­ally great about Pa­ganini to­gether, added a lit­tle bit of ex­tra lux­ury and then pre­sented these won­der­ful Ir­ish desserts in­no­va­tively.”
