Dish: Crab Salad with Glenilen Yoghurt & Lemon Dressing
Sporting the same sleek lines as many of the modern yachts moored at the quayside just across the road, everything about Fishy Fishy is imbued with the spirit of the sea and there are few finer places to be on a fresh summer morn than sitting down on the outside terrace and tucking into one of Shanahan’s crab salads, washed down with a nice chilled glass of crisp Chablis. Cos lettuce, chopped tarragon and oven-dried tomatoes are dressed, Ceasar salad- style, with a simple dressing of Glenilen Yoghurt and Lemon juice, seasoned with salt and black pepper. Fresh crab meat and a crab claw are laid on top, followed by a few more leaves of tarragon.
“The most important part of the dish is the crab,” says Shanahan, “it has to be fresh. I get mine from local fisherman Christy Hurley.”
