BANANA PANCAKES

INGREDIENT­S: (Serves 4)

½ large ripe banana

1 large egg

½ teaspoon of vanilla extract 1 tablespoon of rapeseed oil 1 pinch of ground cinnamon

INSTRUCTIO­NS:

Preparatio­n: (5-7 minutes) 1. Use a fork to mash the banana into a paste on a plate.

2. Crack the egg into a bowl and whisk with a fork — remove any shell. 3. Add the mashed banana, cinnamon and vanilla into the bowl and thoroughly mix all ingredient­s.

Cooking: (2-3 minutes per pancake)

4. Heat the rapeseed oil on a medium frying pan.

5. Pour 2 tablespoon­s of batter onto the pan.

6. Cook on one side for 30-60 seconds until the bottom appears to be set.

7. Flip with a spatula and cook until pancakes are golden brown on both sides. 8. Repeat with the rest of the mixture. 9. Serve warm with healthy toppings of your choice.
