Tuna time!

Ev­ery time I visit Sicily, there are al­ways a few in­gre­di­ents that come back in my suit­case! There are tins of good qual­ity an­chovies and al­ways some jars of gor­geous tuna. There is so much I do with them and they are very use­ful when your time is lim­ited. I sneak the an­chovies into beef casseroles and sauces and the chil­dren don’t even no­tice, but it takes your cook­ing to the next level! I add a jar of tuna to mac and cheese with a splash of le­mon and ev­ery­one hops o it, or I make a sim­ple Ital­ian tomato and tuna casse­role with plenty of spinach to serve on a cold rainy day with plenty of u y mash. Fish cakes also go down a treat and I al­ter­nate be­tween Asianstyle and Mediter­ranean ones lled with sun­dried to­ma­toes, cour­gettes and Parme­san for a de­li­cious and quick meal.
