Don't throw away egg whites, they ac­tu­ally freeze sur­pris­ingly well. Just put them in a con­tainer, label it with the num­ber of egg whites they con­tain, then thaw them out when you want to use them in meringues or cakes. If you can't re­mem­ber how many are in the con­tainer, just weigh out 28g (1oz) for each egg white.
