Thoma was, for many years, at the former Il Primo on Montague Street, where her contemporary Italian cuisine had a big following. Always a busy lady, in September she is also embarking on a unique two-year master’s programme at the Institute of Technology Tallaght (ITT), which will see her graduate with an MSc in applied culinary nutrition.
