When shred­ding large mint leaves, such as for the orange, pome­gran­ate and mint dish, above left, it’s a good idea to re­move the tough, fi­brous vein that runs up the back of the leaf. Fold the leaf in half length­wise with the vein on the out­side, then pull the vein away, be­fore plac­ing all the pre­pared leaves on top of each other, and shred­ding them hor­i­zon­tally.
