RACHEL’S TIP

Sunday Independent (Ireland) - Life - - APPETITES -

When shredding large mint leaves, such as for the orange, pomegranate and mint dish, above left, it’s a good idea to remove the tough, fibrous vein that runs up the back of the leaf. Fold the leaf in half lengthwise with the vein on the outside, then pull the vein away, before placing all the prepared leaves on top of each other, and shredding them horizontally.
