You will need: 4 tablespoons tahini 4-5 tablespoons maple syrup Pinch of sea salt flakes 45g (1 ½ oz) milled chia seeds 4 tablespoons hemp seed powder 2 tablespoons cacao powder, or cocoa powder, plus extra for dusting In a bowl, use a fork to beat the tahini, the maple syrup and the sea salt flakes together until the mixture is thick. Measure in the milled chia seeds, the hemp seed powder and the cacao powder or the cocoa powder, whichever you are using, and encourage them to rumba. This may take a bit of persuasion. Take a small, cherry-sized ball of mixture, and roll it between the palm of your hands to form a bonbon. Parachute each bonbon into some cacao powder (yes, cocoa powder is perfectly fine too, folks!) and roll to coat it. Set the bonbon on a cold plate. As soon as you’ve used up all the mixture, refrigerate the bonbons for one hour to set them.
