You will need: 4 ta­ble­spoons tahini 4-5 ta­ble­spoons maple syrup Pinch of sea salt flakes 45g (1 ½ oz) milled chia seeds 4 ta­ble­spoons hemp seed pow­der 2 ta­ble­spoons ca­cao pow­der, or co­coa pow­der, plus ex­tra for dust­ing In a bowl, use a fork to beat the tahini, the maple syrup and the sea salt flakes to­gether un­til the mix­ture is thick. Mea­sure in the milled chia seeds, the hemp seed pow­der and the ca­cao pow­der or the co­coa pow­der, whichever you are us­ing, and en­cour­age them to rumba. This may take a bit of per­sua­sion. Take a small, cherry-sized ball of mix­ture, and roll it be­tween the palm of your hands to form a bon­bon. Para­chute each bon­bon into some ca­cao pow­der (yes, co­coa pow­der is per­fectly fine too, folks!) and roll to coat it. Set the bon­bon on a cold plate. As soon as you’ve used up all the mix­ture, re­frig­er­ate the bon­bons for one hour to set them.
