If the butternut squash is quite fresh, it’s not nec­es­sary to peel it for the butternut squash and sweet potato soup. To test it for fresh­ness, cut off a bit of the peel and taste it. If it’s got the same bite as the flesh then there’s no need to peel it, but if the skin is tough and hard, peel it.
