If you’re cook­ing these recipes, I sug­gest mak­ing the tur­key or goose stuff­ing a day or two be­fore, and stor­ing it in the fridge. The cran­berry sauce recipe that I wrote about last week could be made weeks in ad­vance, and will hap­pily sit in the fridge. I’m all for trim­ming the Brus­sels sprouts on Christ­mas Eve; then just cover them with wet kitchen pa­per and keep them in the fridge.
