MAKE A CHER­MOULA STEAK SAUCE

Mix the zest of 1 lemon and 2tsp each toasted cumin and co­rian­der seeds with 1 de­seeded, finely chopped red chilli. Add 2 cloves crushed gar­lic and a hand­ful each finely chopped co­rian­der and mint. Add 100ml olive oil and 25g pine nuts and whiz in a food pro­ces­sor. Pour over 2-4 cooked steaks.
