grated Parme­san cheese and stir well to com­bine. Di­vide and shape the mix­ture into 2 equal-sized pat­ties. Use a pas­try brush to dab a lit­tle of the beaten egg all over each pat­tie. Place a medium fry­ing pan over a low heat and add a lit­tle olive oil. Once hot, add the pat­ties (you may need to do th­ese one at a time, de­pend­ing on the size of your pan) and fry for 2-3 min­utes on each side, or un­til they’re crispy and golden. Serve with a fresh green salad.
