grated Parmesan cheese and stir well to combine. Divide and shape the mixture into 2 equal-sized patties. Use a pastry brush to dab a little of the beaten egg all over each pattie. Place a medium frying pan over a low heat and add a little olive oil. Once hot, add the patties (you may need to do these one at a time, depending on the size of your pan) and fry for 2-3 minutes on each side, or until they’re crispy and golden. Serve with a fresh green salad.
