ENJOY SOME ANCHOVIES
Fry 16 anchovy fillets with 2 cloves crushed garlic and 2tbsp olive oil for 2 mins, crushing anchovies to a paste. Add 4tsp lemon juice, 2tbsp chopped parsley and a pinch of dried chilli. Spread on rustic bread with roast vegetables, or with lamb or chicken. Serves 3-4 as a side.
