Fry 16 an­chovy fil­lets with 2 cloves crushed gar­lic and 2tbsp olive oil for 2 mins, crush­ing an­chovies to a paste. Add 4tsp lemon juice, 2tbsp chopped pars­ley and a pinch of dried chilli. Spread on rus­tic bread with roast veg­eta­bles, or with lamb or chicken. Serves 3-4 as a side.
