SERVE AP­PLE PAN­CAKES

The Irish Mail on Sunday - TV Week - - BODY & SOUL -

Melt a knob of but­ter in a small fry­ing pan. Fry 2 thinly sliced eat­ing ap­ples un­til golden and ten­der. Add 2tbsp caster sugar and stir un­til dis­solved, al­low to caramelise, then re­move from heat. Serve on warmed pan­cakes as a brunch or snack. Serves 2.
