Simple Saturday night supper
2tbsp olive oil 1 onion, finely chopped 1 celery stalk, finely chopped 2 garlic cloves, finely chopped 1 leek, finely sliced 1 carrot, finely diced 1 courgette, finely chopped 1.5ltr (2¾pts) chicken/veg stock 100g (3¼oz) stellette (small pasta stars) A handful of mixed veg, such as baby spinach, green beans, peas, tenderstem broccoli 1 spoonful of pesto Heat the oil in a large pan over a medium heat. Gently sauté the onion, celery, garlic, leek and carrot for 10 minutes until softened and just beginning to colour. Add the courgette and stock, then simmer for 5 mins. Add the pasta, cook for 5 mins, then add the veg and cook for a few minutes so they start to soften. Season and serve topped with pesto.
