Sim­ple Satur­day night sup­per

Serves 4

2tbsp olive oil 1 onion, finely chopped 1 cel­ery stalk, finely chopped 2 gar­lic cloves, finely chopped 1 leek, finely sliced 1 car­rot, finely diced 1 courgette, finely chopped 1.5ltr (2¾pts) chicken/veg stock 100g (3¼oz) stel­lette (small pasta stars) A hand­ful of mixed veg, such as baby spinach, green beans, peas, ten­der­stem broc­coli 1 spoon­ful of pesto Heat the oil in a large pan over a medium heat. Gen­tly sauté the onion, cel­ery, gar­lic, leek and car­rot for 10 min­utes un­til soft­ened and just be­gin­ning to colour. Add the courgette and stock, then sim­mer for 5 mins. Add the pasta, cook for 5 mins, then add the veg and cook for a few min­utes so they start to soften. Sea­son and serve topped with pesto.
