BIRCHER MUESLI WITH GRATED APPLE, NUTS AND RAISINS
100g (3½oz) porridge oats 250ml (9fl oz) apple juice Half an apple
1tsp honey 50g (1¾oz) mixed nuts and raisins Soak the porridge oats in the apple juice for at least half an hour or preferably overnight in the fridge. Peel and grate in the apple, stir, then mix in the honey. Place a small frying pan over a medium heat and lightly toast the nuts and raisins for or about 2-4 minutes or until lightly golden — be careful not to burn them. Scatter them over the bircher muesli li and serve immediately.
