WHIP UP A HOL­LANDAISE

Place 2 large egg yolks in a small food pro­ces­sor. Add 2tbsp lemon juice and whiz un­til com­bined. Melt 125g but­ter in a small pan, then, with the food pro­ces­sor run­ning, very grad­u­ally pour the but­ter into the yolks in a very thin stream un­til the mix­ture is thick and smooth. Serve with some as­para­gus.
