DRIED BLUEBERRY BIS­CUITS

80g (2¾oz) un­salted but­ter, soft­ened 1 large free-range egg 110g (3¾oz) soft brown sugar 100g (3½oz) self-rais­ing flour 1tsp bi­car­bon­ate of soda

50g (1¾oz) oats 30g (1oz) des­ic­cated co­conut 100g (3½oz) dried blue­ber­ries Pre­heat the oven to 180°C/gas 4. Whiz the but­ter, egg and sugar in a food pro­ces­sor un­til creamy. Whiz in the flour, bi­car­bon­ate of soda, oats, , co­conut, blue­ber­ries and a pinch of salt. Bake in flat­tened tened balls on a lined bak­ing tray for 10 min­utes un­til golden brown.
