DRIED BLUEBERRY BISCUITS
80g (2¾oz) unsalted butter, softened 1 large free-range egg 110g (3¾oz) soft brown sugar 100g (3½oz) self-raising flour 1tsp bicarbonate of soda
50g (1¾oz) oats 30g (1oz) desiccated coconut 100g (3½oz) dried blueberries Preheat the oven to 180°C/gas 4. Whiz the butter, egg and sugar in a food processor until creamy. Whiz in the flour, bicarbonate of soda, oats, , coconut, blueberries and a pinch of salt. Bake in flattened tened balls on a lined baking tray for 10 minutes until golden brown.
