Fry 2 cour­gettes, sliced, with a clove of crushed gar­lic and 200g shelled raw prawns in 1tbsp oil and a knob of but­ter till the prawns are pink and the cour­gettes ten­der (about 3 mins). Add a hand­ful of frozen peas and cook for 1 minute, then add the grated zest of 1 lemon and serve with cooked pasta.
