Bring 500g stoned cher­ries to the boil with the zest and juice of 1 or­ange, 2tbsp caster sugar and 1tbsp brandy or kirsch, then sim­mer for 2-3 mins un­til soft­ened. Serve warm with pan­cakes or waf­fles and a scoop of ice-cream.
