Cook 2 bunches of as­para­gus on a hot grid­dle for 3-4 mins till ten­der. Mean­while, fry 1 clove gar­lic and 50g fresh bread­crumbs in 1tbsp olive oil un­til golden. Re­move from heat. Add 2tbsp finely chopped pars­ley and the zest and juice of half a lemon. Sea­son and sprin­kle on top. Serves 4.
