Com­bine soft, sweet ripe apri­cots (or dried apri­cots) with crumbly Span­ish manchego ched­dar. A driz­zle of honey over the top wouldn’t go amiss, plus some finely chopped stem ginger or crum­bled amaretti bis­cuits, if you’re feel­ing deca­dent.
