Pre­heat oven to 180°C/gas 4. Bake some split pitta for 5 min­utes till golden, break into small chunks and place in a bowl.

Roughly chop and add toma­toes, cu­cum­ber, radishes, jarred red pep­pers and nd mint, then toss to com­bine. Dress with ex­trax­travir­gin oil and lemon juice and sprin­kle with h sumac (from supermarkets) be­fore serv­ing.
