MEX­I­CAN POP­CORN

25g (1oz) un­salted but­ter or 2tbsp olive oil

A pinch of cayenne or hot chilli pow­der 1tsp ground cumin 1tsp dried oregano 1tsp smoked pa­prika Juice of ½ a lime and zest of 1 lime Make the pop­corn as be­fore, then heat the but­ter or oil in a pan, stir in all the spices and cook gen­tly for 1 minute. Stir in the lime juice, then pour over the pop­corn; add a pinch of sea salt. Stir till coated and sprin­kle with lime zest.
