SERVE SCALLOPS WITH PANCETTA
Cut 6 slices of pancetta in half and wrap the halves around 12 scallops. Heat 1tsp olive oil in a frying pan and fry the scallops for 1 min on each side until golden. Serve with flavoured mayo (try Hellmann’s Mayonnaise with a Spark of Chilli). Serves 2 (or 4 as a starter).
