SERVE SCAL­LOPS WITH PANCETTA

The Irish Mail on Sunday - TV Week - - BODY & SOUL -

Cut 6 slices of pancetta in half and wrap the halves around 12 scal­lops. Heat 1tsp olive oil in a fry­ing pan and fry the scal­lops for 1 min on each side un­til golden. Serve with flavoured mayo (try Hell­mann’s May­on­naise with a Spark of Chilli). Serves 2 (or 4 as a starter).
