Us­ing a pes­tle and mor­tar or spice grinder, bash 1tsp cumin seeds, 1tbsp dried oregano, and mix with 1tbsp ground an­natto (Latin Amer­i­can spice, avail­able on­line), 1 ground an­cho chilli, 3 chopped bay leaves and the zest of 1 lime. Rub over seafood or pork, or use to mar­i­nate brisket.
