In a pes­tle and mor­tar or spice grinder, r, bash to­gether 2tsp cumin seeds, 2tsp co­rian­der seeds, 1tsp car­damom pods, 2tsp garam marsala, 2tsp dried ginger, 1tsp turmeric, ½tsp cayenne pep­per, 1tsp yel­low mus­tard seeds and 2tbsp chopped fresh curry leaves. Rub over chicken, lamb or veg­eta­bles.
