Us­ing a pes­tle and mor­tar or spice grinder, bash ½tbsp cloves and ½tbsp all­spice, then mix with 1tbsp za’atar (Mid­dle Eastern sea­son­ing) and 1tbsp sumac. Add a gen­er­ous pinch of salt and use to coat veg­eta­bles or rub over chicken be­fore roast­ing.
