EN­JOY STRAW­BERRY MERINGUES

Whip 300ml dou­ble cream with 1tbsp ic­ing sugar till thick. Add 200g chopped straw­ber­ries and 200ml Greek yo­ghurt. Whisk un­til the berries are lightly crushed; add a hand­ful of torn mint. Spoon into 4 meringue nests.
