Bring 4 squashed, peeled gar­lic cloves, ½ a bunch of fresh basil, leaves torn, 2 red chill­ies, halved length­ways, and 500ml (18fl oz) cider vine­gar to the boil in a pan, then sim­mer for 5 min­utes. Leave to in­fuse for at least 1 hour or overnight. Cool, strain, re­turn gar­lic and chill­ies to the vine­gar, then store in a ster­ilised bot­tle.
