Halve 1 pome­gran­ate, then bash it with a spoon into a pan to re­lease all the seeds and juice. Add 500ml (18fl oz) white wine vine­gar. Bring to the boil, then re­duce to a sim­mer for about 5 min­utes. Leave the flavours to in­fuse for at least 1 hour, or overnight. Sieve, then store in a ster­ilised bot­tle.
