OR­ANGE & CAR­DAMOM

Place the zest of 1 or­ange (free of pith) and 8 squashed car­damom pods in a saucepan with 500ml (18fl oz) white bal­samic vine­gar. Bring to the boil, then sim­mer for about 5 min­utes. Pour the vine­gar straight into a ster­ilised bot­tle and store.
