8 slices of pancetta 600g (1lb 5oz) monk­fish tail, cut into 16 cubes of about 2cm (¾in) About 200g (7oz) day-old fo­cac­cia, cut into 16 cubes and sprin­kled with wa­ter 8 Dutch or other long fresh red chill­ies, cut in halves 2 red onions, each cut into 8 wedges 2 lemons, cut into wedges, plus juice of 1 to serve Olive oil 8 wooden skew­ers or long sticks of rose­mary, leaves stripped
