CHILLI, CO­RIAN­DER AND LIME (To serve with white fish, prawns or mack­erel)

Blitz to­gether ½ a red chilli, a few co­rian­der sprigs, the juice of 1 lime, 1-2tsp soy sauce and 1-2tsp olive oil. Al­ter­na­tively, bash the chilli and co­rian­der with a pes­tle and mor­tar, then stir in the juice, soy and oil.

HONEY, SE­SAME AND SOY

(Great to serve with pan-fried salmon, white fish or prawns) Mix 2tbsp honey, 1tsp se­same oil, 1tbsp soy sauce and 2tbsp se­same seeds all to­gether in a bowl. (Won­der­ful for white fish or prawns) In a bowl, mix 4tbsp plain yo­ghurt, 1-2 crushed gar­lic cloves, 2tsp olive oil and chopped mint to taste, then sea­son with salt and ground pep­per.

SATAY

(For white fish or prawns) Blitz 75g un­salted roasted peanuts with 1 gar­lic clove, ½ a de­seeded red chilli, 1tbsp p brown sugar, 1tbsp fish sauce, , 2-3tbsp light co­conut milk, 1tsp sp soy sauce, the juice of 1 lime and a splash of wa­ter. Taste and ad­just any of the in­gre­di­ents to your lik­ing.
