CHILLI, CORIANDER AND LIME (To serve with white fish, prawns or mackerel)
Blitz together ½ a red chilli, a few coriander sprigs, the juice of 1 lime, 1-2tsp soy sauce and 1-2tsp olive oil. Alternatively, bash the chilli and coriander with a pestle and mortar, then stir in the juice, soy and oil.
HONEY, SESAME AND SOY
(Great to serve with pan-fried salmon, white fish or prawns) Mix 2tbsp honey, 1tsp sesame oil, 1tbsp soy sauce and 2tbsp sesame seeds all together in a bowl. (Wonderful for white fish or prawns) In a bowl, mix 4tbsp plain yoghurt, 1-2 crushed garlic cloves, 2tsp olive oil and chopped mint to taste, then season with salt and ground pepper.
(For white fish or prawns) Blitz 75g unsalted roasted peanuts with 1 garlic clove, ½ a deseeded red chilli, 1tbsp p brown sugar, 1tbsp fish sauce, , 2-3tbsp light coconut milk, 1tsp sp soy sauce, the juice of 1 lime and a splash of water. Taste and adjust any of the ingredients to your liking.
