Serves 8 as a side

80g (2¾oz) blue cheese 1-2tbsp red wine vine­gar 2-3tbsp ex­tra-vir­gin olive oil Juice of ¼ of a lemon 300g (10½oz) sum­mer leaves 1 red ap­ple, cored and sliced To make the dress­ing, crum­ble the blue cheese into a bowl, then cream it slightly with a wooden spoon or spat­ula.

Add the red wine vine­gar, pour in the ex­tra-vir­gin olive oil, squeeze in the lemon juice and then whisk all to­gether un­til com­bined. Sea­son with a pinch of sea salt and some black pep­per, to taste.

Drop the sum­mer salad leaves and the sliced ap­ple into a large serv­ing bowl, then pour over half of the dress­ing and toss.

Add the rest of the salad dress­ing, sea­son again to taste and serve.
