MIXED LEAF, APPLE & BLUE CHEESE SALAD
Serves 8 as a side
80g (2¾oz) blue cheese 1-2tbsp red wine vinegar 2-3tbsp extra-virgin olive oil Juice of ¼ of a lemon 300g (10½oz) summer leaves 1 red apple, cored and sliced To make the dressing, crumble the blue cheese into a bowl, then cream it slightly with a wooden spoon or spatula.
Add the red wine vinegar, pour in the extra-virgin olive oil, squeeze in the lemon juice and then whisk all together until combined. Season with a pinch of sea salt and some black pepper, to taste.
Drop the summer salad leaves and the sliced apple into a large serving bowl, then pour over half of the dressing and toss.
Add the rest of the salad dressing, season again to taste and serve.
