Jamie Oliver’s fab fruit fest using only the freshest and zestiest seasonal produce
This week I want to show you how to make the most of beautiful seasonal fruit. It seems that these days, as we rely more on supermarkets instead of corner stores, markets and grocers, we’ve become used to getting fruit all year round and have forgotten about flavour. There’s a lot of fruit out there that looks great but tastes rubbish because it’s not in season. Take strawberries, for example: eight months of the year they taste horrible, but when they’re in season they’re the most delicious berries out there. Knowing what to do with seasonal fruit is an integral part of the cooking repertoire, so I want to show you some interesting ways to treat it, dress it and present it.
To kick off with we’ve got a bright, zingy fruit salad. Dressing the fruit is all about enhancing those fresh flavours, so don’t be put off by the herbs — they create an incredible taste. Any fruit will work, so go with what’s in season and looking its best. Next up, cherries and chocolate — a cheeky combo that works so well. Chill the cherries first and it’ll make all the difference.
Freezing any leftover fruit you’ve got at home is a great habit to get into. You can use it to make all sorts of exciting things, like this limoncello and fruit salad fro-yo. It’s really easy to knock together and makes a super-refreshing treat; remember to take out the limoncello for the kids though! And last up, we’ve got a creamy coconut tapioca pudding, which makes a brilliant vehicle for all sorts of fruit — use whatever you have to hand.

For a scrumptious summer ice-cream, any time of year, whiz up 500g (1lb 2oz) frozen strawberries, 250ml (9fl oz) natural yoghurt, 1tbsp honey and a dash of Pimm’s – incredible.
