Jamie Oliver’s fab fruit fest us­ing only the fresh­est and zesti­est sea­sonal pro­duce

This week I want to show you how to make the most of beau­ti­ful sea­sonal fruit. It seems that th­ese days, as we rely more on supermarkets in­stead of cor­ner stores, mar­kets and gro­cers, we’ve be­come used to get­ting fruit all year round and have for­got­ten about flavour. There’s a lot of fruit out there that looks great but tastes rub­bish be­cause it’s not in sea­son. Take straw­ber­ries, for ex­am­ple: eight months of the year they taste hor­ri­ble, but when they’re in sea­son they’re the most de­li­cious berries out there. Know­ing what to do with sea­sonal fruit is an in­te­gral part of the cook­ing reper­toire, so I want to show you some in­ter­est­ing ways to treat it, dress it and present it.

To kick off with we’ve got a bright, zingy fruit salad. Dress­ing the fruit is all about en­hanc­ing those fresh flavours, so don’t be put off by the herbs — they cre­ate an in­cred­i­ble taste. Any fruit will work, so go with what’s in sea­son and look­ing its best. Next up, cher­ries and choco­late — a cheeky combo that works so well. Chill the cher­ries first and it’ll make all the dif­fer­ence.

Freez­ing any left­over fruit you’ve got at home is a great habit to get into. You can use it to make all sorts of ex­cit­ing things, like this li­mon­cello and fruit salad fro-yo. It’s re­ally easy to knock to­gether and makes a su­per-re­fresh­ing treat; re­mem­ber to take out the li­mon­cello for the kids though! And last up, we’ve got a creamy co­conut tapi­oca pud­ding, which makes a bril­liant ve­hi­cle for all sorts of fruit — use what­ever you have to hand.

Give th­ese recipes a go and hope­fully you’ll come across some sur­prises and some re­ally nice, bright flavours wrapped around a hum­ble fruit.

For a scrump­tious sum­mer ice-cream, any time of year, whiz up 500g (1lb 2oz) frozen straw­ber­ries, 250ml (9fl oz) nat­u­ral yo­ghurt, 1tbsp honey and a dash of Pimm’s – in­cred­i­ble.

Chop up your favourite sea­sonal fruits and pop them in the freezer in a seal­able sand­wich bag – you can whiz them up into de­li­cious smooth­ies for a superquick, healthy break­fast when­ever you like.
