Sim­mer 150g (5½oz) sugar, 150ml (5fl oz) wa­ter, 3 strips each of or­ange and lemon zest, 4 cloves, a pinch of all­spice, 1 cin­na­mon stick, a few nut­meg grat­ings, slices of fresh ginger and a squeeze of honey for 4 mins, then cool. Strain into a ster­ilised jar, then chill.
