Sim­mer 150g (5½oz) sugar, 150ml (5fl oz) wa­ter, 4tbsp co­conut cream and 4tbsp des­ic­cated co­conut for 4 mins, then re­move from the heat and cool. Strain in a sieve, press­ing to ex­tract all the syrup, then pour into a ster­ilised jar and chill.
