GINGER & MINT

The Irish Mail on Sunday - TV Week - - FOOD & DRINK -

Sim­mer 150g (5½oz) sugar, 150ml (5fl oz) wa­ter, a 4cm (1½in) piece of fresh ginger, sliced, and ½ a bunch of fresh mint for 4 mins, then re­move from the heat and cool. Strain through a fine sieve, then pour into a ster­ilised jar and chill.
